Tuesday Treats: Pumpkin Gingersnap Parfaits

We are going to continue our pumpkin-themed recipes this week with these Pumpkin Gingersnap Parfaits by The Gourmand Mom. These quick and easy parfaits would be a perfect addition to any Thanksgiving get-together.

Servings: 4

Ingredients:

  • 1 15-ounce can pumpkin puree
  • 4 ounces cream cheese, softened
  • 2-3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 1 cup heavy cream
  • 2-3 tablespoons sugar
  • 16 gingersnap cookies
Directions:
  1. Crush 12 of the gingersnap cookies. Set aside.
  2. Beat together the pumpkin, cream cheese, brown sugar, and spices until evenly combined. In a separate bowl, beat together the heavy cream and sugar until thickened.
  3. To assemble the parfaits, divide half of the pumpkin mixture into four cups. Sprinkle 1/3 of the gingersnap crumbs over the pumpkin. Spoon about half of the whipped cream over the gingersnaps in the four cups. Sprinkle with another 1/3 of the gingersnap crumbs. Spoon the remaining pumpkin mixture over the gingersnap crumbs. Sprinkle with the remaining crumbs. Garnish with the remaining whipped cream and a gingersnap cookie.

Tuesday Treats: Pumpkin Pie-sicles

These Pumpkin Pie-sicles made of butternut squash will have your kids thinking that they are eating frozen pumpkin pie!

Ingredients:

  • 2 1/2 lbs. butternut squash
  • 1/2 cup pure maple syrup
  • 2/3 cup light cream
  • 1/2 to 3/4 teaspoon pumpkin pie spice

Directions:

  1. To make a batch, cut a butternut squash into quarters and scoop out the seeds.
  2. Boil, bake, or microwave the squash until it’s soft. Let the squash cool a bit before scooping its flesh into a medium-size bowl.
  3. Add pure maple syrup, light cream, and pumpkin pie spice to the bowl. Use a potato masher to mush the squash and blend all of the ingredients.
  4. Spoon the mixture into ice pop molds (we were able to fill 10), add sticks, and freeze for at least 6 hours before serving.

Tuesday Treats: Witches’ Brew for Kids

A good Witches Brew is a must-have for any Halloween party! Check out this Witches’ Brew for Kids courtesy of Kraft…

 

 

Servings: 12 servings, 1 cup each

Prep Time: 15 minutes

Total time: 2 hr 15 min

Ingredients:

  • 2 pkg.  (4-serving size each) JELL-O Black Cherry Flavor Gelatin
  • 1-1/2 cups  boiling water
  • 1 pkg.  (4-serving size) JELL-O Orange Flavor Gelatin
  • 3/4 cup  boiling water
  • 1/4 cup  blueberries
  • 3 qt.  (12 cups) prepared KOOL-AID Orange Flavor Sugar-Sweetened Soft Drink Mix, chilled
Directions:
  • Hand: Dissolve black cherry gelatin in 1-1/2 cups boiling water, stirring 2 minutes until completely dissolved. Pour into greased 8-inch square pan. Refrigerate 2 hours or until firm.
  • Eyeballs: Meanwhile, dissolve orange gelatin in 3/4 cup boiling water, stirring 2 minutes until completely dissolved. Pour into round or square ice cube trays. Refrigerate until thickened but not set. Insert a blueberry into the center of each gelatin eye ball. Refrigerate until completely set.
  • Assemble: Trace outline of small hand on piece of paper. Cut out pattern, then place on top of cherry gelatin. Cut around the pattern with a small sharp knife. Carefully pull hand away from pan. Place hand in punch bowl, allowing the fingers to hang over the side of the bowl. Arrange the eyeballs around the inside edge of the punch bowl. Gradually pour in the prepared drink. Serve immediately.

Tuesday Treats: Halloween Popcorn Bars

Since Halloween is quickly approaching, I will be featuring Halloween-inspired Tuesday Treats the next couple of weeks. This week, will start with these yummy Halloween Popcorn Bars from Real Mom Kitchen.

Ingredients:

  • 9 to 10 cups of popped popcorn
  • 1 cup salted peanuts
  • 1 cup broken pretzel pieces
  • 1 cup Karo Lite Corn Syrup (or regular will do)
  • 1/4 cup butter
  • 1 (11.5 oz) package milk chocolate chips
  • 1 cup Reese’s Pieces Baking Pieces or regular Reese’s Pieces
Directions:
  • Spray a large bowl with cooking spray.  Add popcorn, peanuts, and pretzels to the bowl.
  • In a medium sauce pan, cook corn syrup and butter over medium heat stirring constantly.  Bring to a full boil and boil for 1 minute.
  • Remove from heat and mix in the chocolate chips.  Stir until all the chips are melted.
  • Pour over popcorn, peanuts, and pretzel pieces and mix well.  Stir in Reese’s Pieces.
  • Press into a greased 9 x 13 inch dish.  Cool for 1 hour and cut into bars.

Tuesday Treats: Bite-Size Apple Pies

 

This week’s Tuesday Treats features Cookin’ Up North’s take on Taste of Home’s Bite-Size Apple Pies. In the recipe below, Laurie leaves the skin on the apples. However, if your family would prefer not to eat the skin, feel free to peel the apples.

 

 

Ingredients:

  • 1/2 c. sugar
  • 2 tsp. cinnamon
  • 1 pkg. (14.1 oz..} refrigerated pie crust
  • 3 tbsp. melted butter, divided
  • 2 medium tart apples, each cut into 8 wedges

Directions:

  1. In a small bowl, combine the sugar and cinnamon, set aside 1 Tbsp. On a lightly floured surface, unroll the pastry. Brush with  2 Tbsp. melted butter, sprinkle with remaining sugar mixture.
  2. Cut each sheet into 8 one inch strips, about 8 in. long. Wrap one strip around each apple wedge, placing sugared side of pastry against apple.
  3. Place on parchment paper lined baking sheet. Brush tops with melted butter and sprinkle with sugar mixture. bake at 425 for 13-15 minutes or until pastry is golden brown. Serve warm. Makes 16.

Tuesday Treats: Acorn Dough Nuts

 

I don’t know about you, but the day after Labor Day, I immediately go into fall mode. These Acorn Dough Nuts from Family Fun are the perfect fall treat!

 

 

Ingredients:

  • Chocolate Frosting or Peanut Butter
  • Doughnut Holes
  • Crumbled Toffee
  • Pretzel
Directions:
  1. Frost a third or so of a plain or glazed doughnut hole with chocolate frosting or peanut buter.
  2. Roll the frosted top in a crumbled toffee (look for it in the baking section of your local grocery store), then add a small piece of pretzel for the stem.
Easy peasy, right? ;)

Tuesday Treats: Strawberry Green Smoothie Pops

Your kids will love the bright colors in these Strawberry Green Smoothie Pops. You will love that your kids are getting a nutritious snack.

Ingredients:

  • 1 container (6 oz) Yoplait® Original 99% Fat Free French vanilla yogurt
  • 1 cup sliced strawberries
  • 1 container (6 oz) Yoplait® Original 99% Fat Free Key lime pie or French vanilla yogurt
  • 1 cup packed fresh spinach leaves
  • 1/4 cup apple juice

Directions:

  • In blender, place 1 container French vanilla yogurt and strawberries. Cover; blend until smooth. Spoon 2 tablespoons mixture into each of 5 (5-oz) paper cups. Cover cups with foil; insert craft stick into center of each pop. (Or fill ice pop molds according to manufacturer’s directions.) Put remaining mixture in bowl; cover and refrigerate. Freeze pops about 2 hours or until frozen.
  • In blender, place Key lime pie yogurt, spinach and apple juice. Cover; blend until smooth. When first layer is frozen, remove foil from pops. Pour about 1 1/2 tablespoons spinach mixture in each cup over frozen layer. Put remaining mixture in bowl; cover and refrigerate. Return foil to pops to support sticks. Freeze about 2 hours or until frozen.
  • Repeat with remaining strawberry and spinach layers, freezing at least 2 hours between layers.
